Kill the Easter Bunny Brownies

what you need:

1 1/4 cups flour  of your choice ( works with whole grain,cake flour or a gluten-free cake blend)
3/4 teasp. baking powder
1/2 teasp. salt
6 ounces of  left over easter chocolate
4 tablesp. dutch-processed cocoa powder
1/4 teasp. cinnamon
1 1/2 sticks unsalted butter
1 3/4 cup sugar
4 large eggs
1 tablsp. vanilla extract ( or rum extract)
1 cup toasted walnut or pecans (optional)

set the oven to 325 ( 160 celsius). line a baking sheet with foil and grease the foil. whisk flour, baking powder, salt together. melt chocolate and butter together in the microwave, stirring it often.  transfer the butter chocolate mixture into a large bowl and add the sugar. let it cool slightly. whisk the eggs in into the mixture. add vanilla and whisk again. now fold in the flour mixture, until all is well combined. add the batter to the prepared pan and smooth on top. sprinkle now with the the toasted nuts, if using. bake the brownies for about 30-40 min ( depending on your oven). if a toothpick is inserted into the center and comes out with just a few moist crumbs attached, the brownies are done.

what you need:

1 1/4 teaspoons active dry yeast
1 1/4 cups warm milk
1 1/2 eggs, divided
3/8 cup (6 Tablespoons) butter, melted
1/4 cup granulated sugar
1/4 teaspoon salt
1  teaspoon vanilla extract
2 cups whole grain or all-purpose flour
 
 

 

mix all the dry ingredients together, and all the wet ingredients, except for the egg whites. now add the wet to the dry ingredients blend everything well together. cover the batter and let it sit for about 1 hour. after the batter has risen, beat the egg whites until they are stiff ( do the the hat test ;-)  ). fold in the egg whites into the batter, and bake the waffles in an iron according to manufacturer’s instructions.

i served them with fresh blueberry sauce and homemade vanilla whip… enjoy :-)

what you need for the cake base:

2/3 cup of gluten free cake flour  ( or this gluteb free blend http://www.food.com/recipe/i-cant-believe-its-not-gluten-gluten-free-cake-flour-mix-189120 )
1/4 ground hazelnut (optional)
3 eggs separated
1 teasp. gluten free real vanilla extract
1 teasp. rum ( 1/2 or rum extract)
1 1/2 pure cocoa powder
1/2 teasp. gluten free baking powder
pinch salt, pinch cinnamon
1/2 sugar
 
 

set the oven to a 425 fahrenheit or 220 celcius.

line a springfrom with parchment paper.

in a bowl, beat egg yolks, 1/4 cup of the sugar, salt, cinnamon, rum and vanilla extract + 1 tablesp. cold water with a hand mixer, until you have a creamy pale mixture. add the coco powder. beat the egg whites with the rest of the sugar. add the baking powder and flour to the egg yolk mixture, mix well. add half of the beaten egg whites to the mixture, mix well but slowly. add the hazelnut. now with a spatula fold in bit by bit the egg white into the cake batter. pour batter into the springform and bake for about 10-12 min ( depends on your oven)

let it cool of in the pan for 5 min. with a knife go around the cake to loosen it. turn the cake on a cooling rack. with a cold rag, wipe over the parchment paper so you can easily and carefully take it off. let it cool off completely.

what you need for your cream:

3  ripe bananas
1 package gluten free hot cooking pudding
milk
1/4 cinnamon
1 cup curd ( or mascarpone)
1/2 sour cream
4 tableps. sugar ( more or less depends how ripe you bananas are and how sweet you like your cream to be…stevia is an option as well agave nectar
1/2 teasp gelatin soaked in 1 teasp.  cold water
your favorite ganache recipe
 

cook the pudding as intructed but with half of the milk. when the pudding is done ( still hot) add your curd, sour cream, sugar and mix well. now for a few  sec. ( 10 sec) heat the gelatin in the microwave till it is melted. add 2 tablesp. of the pudding-curd mixture to the melted gelatin and stir. add it back to the mixture. add the cinnamon and blend all well together.

add a cake ring around the cake base. slice the bananas in half and spread them out onto to the cake base. now cover with the pudding-curd mixture and smooth it out. let it sit in the fridge for about 3 hours. loosen the cake with a small knife and drizzle with your ganache.

what you need: 

1 cup frozen young spinach leaves ( thawed)
1 Egg
3 tablesp. veggie broth
1/2 onion finely chopped
1 garlic pressed
1 tablesp. olive oil
3 tablesp. whole grain flour ( or gluten free cake flour)
salt ,pepper
1/2 teasp. paprika
1/4 teasp. gluten free baking powder
1 tablesp. fresh lemon juice
zest of  one lemon
1/2 cup feta cheese crumbled
1 cup quinoa
1 tablesp, fresh chopped parsley
4 tablesp. olive oil 

cook quinoa in 2 1/4 cups of water  and a 3/4 teasp. salt for 20 min and let it expand for 5 min. add  the quinoa  to a blender and blend till it’s really fine. now add every ingredient, except for the feta cheese and the egg. blend everything well together to you have a nice thick batter, and season with salt and pepper ( taste it, so you know how much you will need). now add the egg and blend just till all is well incorporated.  add the batter to a bowl and fold in the feta cheese. heat a  pan with the olive oile and bake with  the quinoa cakes like pancakes (on middel-high heat), until golden and crisp.

serve with a garlic-herb yogurt sauce
